Shepherd’s Pie ( my version)


In the beginning I would like to clarify that technically Shepherd’s pie is basically a beef casserole. But I have adapted this popular and delicious comfort food to the meat that we eat; which is Chicken. So this is basically a Chicken casserole. And since beef is itself juicy I believe thus the recipes don’t generally call for sauce and ginger garlic. But i believe chicken will tatse very bland like that thus I have made a few additions to this dish.

The best thing about this dish is that this needs very less prep time and that too could be done in advance. So if planning this in your menu in a party, you can  do the prep and keep it ready and when guests arrive you can just layer it in a jiffy and shove it in the oven and go chat while this bakes.Ok don’t shove it though; place the dish nicely on the baking rack. I think your guests won’t be too happy with a sloppy casserole 😬

Prep time : 20 mins

Cooking time : 10 mins

Baking time : 20 mins

Ingredients

Mince chicken – 300 gms

Potatoes -4 large , peeled and cubed

Carrots – 4, peeled and cubed

Peas – 1/4 cups

Onion – 2 , chopped

Garlic paste – 2 tsp

Garlic paste – 2 tsp

All purpose flour – 2 tbsp

Worcesterchire sauce / steak sauce – 2 tbsp

Chicken stock – 3/4 cups

Tomato puree – 2 tbsp

Thyme – 1 tsp

Rosemary – 1 tsp

Butter – 2 tbsp

Olive oil – 2 tsp

Cheddar cheese – grated – 1/2 cup

Method: 

Boil the potatoes and carrots separately for 10 -15 mins in salted water

They should be cooked but firm

Once boiled, strain and mash the potatoes.

Add in 1 tbsp butter, salt, a pinch of pepper powder. 

Mix in half of the onions and half of the grated cheese. 

Mix together and keep aside

Drain and mash the carrots. Add a pinch if salt.

Soak the peas in hot water and add this to the carrots and keep it aside

If you are using frozen peas, then thaw it beforehand

You can also lightly saute the peas separately in a spoon of butter before adding, this will give a better taste. But I am much too lazy to do this. πŸ˜†

Put a flat pan on heat and add the oil. 

Now add the rest of onions and saute till soft

Now add the ginger and garlic paste

Add the mince and saute in low heat till you see the chicken turning white

This happens pretty quickly so be sure not to overcook the mince 

Add in the flour, steak sauce and fry for a min

Now add the chicken stock and let it simmer till the liquid dries up completely


Preheat the oven to 350 degrees F

Now in a square baking tray layer the chicken on the bottom

Press it in with a spatula and ensure that it is evenly spread

Now add the carrots as the next layer 

Next add the potatoes and layer this evenly on the layer of carrots

Press it in properly from all sides

Generously spread the cheese as the top layer and cover the dish with aluminium foil

Place it on baking rack

Leave it for 20 mins 

In the meantime go and sing some songs for your guests, if you have a really sucky voice then your guests will be relieved when you finally serve the food and find it even tastier 😝

Take it out when it turns golden brown and let it cool off a bit

Cut into squares using a sharp knife and dig in😊
