Cinnamon is an ingredient which has the most enticing smell. It is known as an aphrodisiac; do not know about that, but for me it does increase my desire to eat it. Even in a mall or market if I am passing by a bakery and I get a whiff of cinnamon then I am bound to go in. It is like a magnet which pulls me in.
So it is but obvious that what I love to bake the most are my gooey, soft, sugary cinnamon rolls. And here below is the recipe I have found that I trust for baking this amazing delicacy.
Prep Time : 30 mins
Standing time : 1 hr
Baking time : 30 mins
Ingredients:
All purpose flour – 4 cups
Hot milk – 1/2 cups
Sugar – 1/4 cups
Egg -1
Butter – 1/3 cups
10 gms of yeast dissolved in 1/2 cups of warm water and kept aside
For the filling:
Sugar – 3/4 cups
Butter – 3/4 cups
Cinnamon powder – 2.5 tbsp
Dry fuits ( raisins, almonds, pecans, walnuts ) – 1/2 cup chopped ( optional)
For the glazing and topping :
Fresh whipped cream – 2 cups
Butter – 4 tbsp
Castor sugar – 1 cup
Vanilla essence -1 tsp
Warm water – 4 tsp
Method:
I a bowl mix the milk, melted butter, egg, salt and sugar.
Seive in 2 cups of flour in it and fold it in.
Add the yeast mix and the rest of the flour.
Gently fold it all in till dough is smooth
Now put it on a floured couter top and knead it till it becomes very pliable.
You may need to put in a bit of muscle power which is good as you get to feel less guilty while eating it. 😝
Place it in a large, greased bowl and cover with a soft cloth.
Leave it for an hour or two and Let it rise to double its volume
Preheat oven to 350 degrees F.
Once it doubles, knead it down again and release all the air. The dough will be quite soft by now.
On roll it with a rolling pin on afloured surface into a 15 by 10 inch rectangle.
Using a brush coat the whole surface with the softened butter.
Tip: do not melt the butter on heat rather leave it at room temperature for softening it down. It will be easier to spread on the dough then and much less messy.
Sprinkle sugar and cinnamon generously leaving only the sides
Sprinkle with the nuts if using.
Starting at the longer side start rolling it into a cylinder using your hands.
Once rolled Seal the edges with your fingers
Now cut it into around 1 inch wide slices
Grease the baking pan and sprinkle sugar on it
Place the rolls together and leave it for another 40 minutes
Bake for 30 mins till it turns golden in colour
Tip : Do not eat them right now. They are very very hot. Trust me you will not like them so hot, Wait for some time even if you feel you can’t 😜
Mix butter, sugar, and vanilla and add hot water slowly, spoon by spoon to get the glaze consitentcy desired.
Whip fresh cream and keep it in the refrigator till the time to serve
Slighly cool the rolls and spread the glaze generously on them
Once further cooled, top them with whipped cream
